Ruth's Carrot Soup
Ingredients
8 Carrots (depending on the size) - Chopped
½ Onion - Diced
1 tsp Ground Ginger
3 Cups Veggie Stock or Chicken Stock
Salt & Pepper (to taste)
Instructions
Sauté onion in a little oil, add carrots once softened a little.
Give it a few minutes and then add ginger and stock.
Simmer until carrots are soft. Use a blender or hand emersion to blend to desired texture.
Taste and add season as needed and more ginger if needed.
Sometimes I add some chili flakes for a lift or more ginger.
